There are over 5,000 different varieties of rice in the world but only three are exclusively covered by the Valencia Rice Denomination of Origin. Senia, Bahía and Bomba are the varieties best adapted to the rice-farming zone, the Albufera nature reserve and more important still, these are the ones most highly recommended for preparing the Mediterranean diet rice recipes, through their ability to carry flavours with all their intensity right to our palates.

These are two varieties belonging to the medium grain type which have the same organoleptic characteristics. This means that the grains are identical as regards both their shape and external colouring, and in their internal composition.Their composition guarantees the creamy texture of the grain after cooking this, and most important of all, the full absorption of the flavours to take these right through to our palates.These peculiarities of the Senia and Bahía varieties make them very suitable for preparing any traditional Valencian recipe.

This has great renown as it has some very particular characteristics of its own. Its organoleptic analysis proves it to be a rice that does not form a pasty mash after cooking, with great consistency and guaranteeing the full absorption of the flavours.

Its main market is in the catering sector, where less experienced cooks are grateful for a certain margin in cooking times. The technical justification of this lies in the fact that the cooked grain does not open lengthways, like the other varieties, but cracks crosswise (like an accordion) reaching a length two or three times that of the raw grain.

It is a very simple matter to distinguish the rice coming under Valencia Rice Origin Denomination in respect of other kinds not covered by this.

All the packages of the product covered by the Denomination have a label on them, which clearly shows the logo and a section with the numerical register provided by the Regulatory Board. This label will be printed on the package or come in the form of an adhesive on this.
